Dinner with Friends: Colter Peck

Join us for the return of our intimate dinner series, Dinner with Friends. This season we’re thrilled to welcome Chef Colter Peck to the Saint Cecilia kitchen.

About Colter Peck
Colter Peck has enjoyed a meandering path to chef-dom, from casual fare, to a Denver winery, before catapulting his career path to Portland where he worked in renowned kitchens like Le Pigeon and Proud Mary. During COVID he took time to work on a Boulder farm to better understand the importance of the supply chain before moving to Austin, Texas to join the kitchen at Two Hands.

A pop-up series later led to him opening his restaurant, Elementary, named for its childlike curiosity and constant education. A love letter to Colter’s inner kid, Elementary served playful and flavorful dishes inspired by global cuisines with an emphasis on seasonality and Central Texas farmers. Originating years ago, Chef Colter’s passion for live fire cooking has further increased alongside his continued collaboration with Mill Scale Metalworks.
