Tre Galline’s Story
Born in Lombardy and shaped by the flavors of Lake Garda, Chef Angelo Dal Bon brought his culinary heritage to Mexico in 2006. Alongside his wife, Magda Valpiani, he founded Tre Galline in Todos Santos, later expanding to the Valle de Guadalupe. Today, he is a benchmark of authentic Italian cuisine in Baja California.
Angelo’s cooking is a bridge between two worlds. He combines traditional Italian techniques—specifically his legendary handmade artisanal pasta—with the freshest local ingredients from Mexico. He is a firm believer in the slow food movement, focusing on sustainability, respect for the product, and cultural integrity.
